welcome back to how to cake it I'm Yolanda I mean at least I think I'm Yolanda cuz I recently dyed my hair and I'm not getting used to it like Eli who is that in the monitor I'm going to make a really delicious simple Christmas treat that you can make at home Reese Witherspoon sent me her latest children's book busy Betty and the perfect Christmas present there's a recipe inside Christmas cereal surprise cookie bars for these bars you're going to need 8 cups of puffed rice cereal 18 sandwich cookies one bag of mini marshmallows divided so I have a cup of it here and then the rest of the mini marshmallows a half a cup of unsalted butter a half a teaspoon of salt a half a cup of white chocolate chips which

will be later melted and then I have a whole bunch of sprinkles and decorations in a large bowl which I have here mixed together the cereal the crushed cookies and one cup of marshmallow I'm going to pour in the rice cereal I'm going to pour in one cup of mini marshmallows and now I have to crush the cookies I'm going to make use of a tool that I'm I'm very sad that I have to let go of this is a rolling pin I've used for years you can see the stain right from the Fawn it rolling but it's broken but for some reason I kept it and now I know why cuz it's going to help me Crush cookies get ready for the noise taada I'm going to pour the crushed cookies into the large bowl oh yes okay now I'm just going to stir this all up like a

salad you know I might carry that uh broken rolling pin on the subway home tonight it's not a terrible idea now we're going to move over to the pot I'm going to tell you what I'm going to do there and then we're going to capture it I'm going to melt the butter stir in the salt and the remaining marshmallows once that's melted I'll come back and pour it in here I forgot to mention before you start on the stove top you want to make sure that your pan is prepared how gorgeous is this pan it's very ni I found this pan at home sents I felt like I had won the lottery you don't have to use parchment you can grease the pan I just like using parchment cuz it makes it easy to lift out I'm going to press it in and then

I'm just going to leave this parchment overhang then when the bars are set I can just pull up here we go we've got our buttery marshmallowy goodness and I'm pouring it into the cereal o just slips out that's nice that is nice I appreciate that now let's stir it all up it always wants to slide around I didn't want to make a mess I didn't but I think it's nicely Incorporated so let's move the pen oh no it was a marshmallowy mess ready it smells so good and I mean you guys can use any kind of cookie you want and that'll change the flavor if you want to chocolate cookie do it man these are ooey gooey good now it's time to press the mixture down so I'm going to start with the spatula what I like to do is use a

smaller cake pan to help me compress it works very well and then you don't have to get your fingers all a mess and most importantly have it all stick to your fingers you could also use a glass or any kind of dish with like a flat bottom to press down but you know what I just realized you can also use um your let's let's not call it a weapon let's call it a multifunctional tool okay so now while it's still sticky on the top I'm going to sprinkle on sprinkles onto my counter first cuz that's part of the recipe I'm going to sprinkle I made it worse I'm going to sprinkle on some Christmas sprinkles I just they're just dancing guys it's not Christmas yet relax now I have a half a cup I might have been a little generous with my half cup don't

tell anyone of white chocolate chips that I'm just going to melt in the microwave and then we're going to spread it and have fun decorating we've got Christmas Jujubes I'll only use a few of those Holly and Beads I've been using these for years these are little Christmas tree yogurt covered pretzels these are Christmas chocolate buttons and then sprinkles I don't know if I'll use more sprinkles I've really sprinkled my favorite part the last step before cutting and eating here we go now you got to work kind of quickly because you want everything to stick to the chocolate but you don't want it to set up too fast going to spread it around we're gonna hide the chunk with all the

goodies you know okay here we go so I'm gonna start by pressing on some pretzels because they're the biggest thing I was going to you know lay them out so every Square gets a tree but I don't think that's necessary candy corn oh one stood up like a tree they've heard you Eli uhoh I put a half candy corn on I won't have that is not in the Christmas spirit Jujubes are going to be hard I'm rethinking this I'm thinking maybe the juju should be on the side and I also feel like the white is so white but maybe that's nice I'm let me overthinking everything people always ask me if my son has fun baking with me and I'm like I mean as fun as you can have with a mom who's really controlling about baking

yes then yes and mess I'm one of those people who could have like never been a camp counselor okay all right I mainly don't want to add sprinkles cuz they go everywhere and then I'm going to be a busy Betty cleaning them up see what I did there it's like a Christmas explosion do you see it this is the best part so the chocolate has set up now let's see if my little trick works I need you to work for me okay woo I won't quit my day job you see that isn't that handy how does that look El looks great so now we have to of course use a ruler you don't have to you can just cut it at home but I am going to use a ruler because I feel better with a ruler in my hand the hardest thing to get through is the

candy so a good sharp blade though will work now I just need to do the same thing in the opposite direction there we go all right okay now I'm going to place them nicely I was thinking like a cake stand what do you think of the showcasing I like the showcasing yes thank you oh my goodness yes I wasn't feeling festive until today I've been going into stores hearing music I'm like guys it was just Halloween these go really well with my belief about baking cuz you can really switch them up and make it your own use whatever cookie you want whatever candies you want and toppings you can use milk chocolate or dark chocolate if you prefer that here we go oh sorry I'm

I'm just at the part where busy Betty is throwing sprinkles everywhere has anyone told her she's going to have to clean them up anyone I'm done work okay it oh it smells so good you know I forgot there was cookies in this till I picked it up M M okay I'll finish this off camera how about that but I have to rate these Christmas cereal surprise Cookie Bars 10 out of 10
