bienvenidos and welcome to another episode of Spain on a fork today we have such an exciting show as we're going to have some basic everyday ingredients and create an extraordinary recipe we're talking a creamy turmeric rice with vegetables this is known as Arroz Meloso con Curcuma y Verduras and let me tell you this dish is filled with so many simply yet delicious flavors It's easy to make where there's no tricky techniques or weird equipment needed and the best part is all done in about 40 minutes folks this is the perfect rice for busy weeknight yet it's elegant enough for a relaxed weekend lunch next to a bottle of Spanish wine
either way it's the kind of food that with each bite is going to fill you with so much goodness alright let's just jump right into this I'm going to add one liter of vegetable broth into a saucepan which is 4 1/4 cups you can also use chicken broth here or even water if you like either way link on how to make my homemade veggie broth in the description box below and we'll heat it with a medium heat at the same time I'm going to heat a large fry pan with a medium heat as well and add in a 1/4 cup of extra virgin olive oil which is 60 ml make sure to use the good stuff here as this is the base fat of the dish and what truly makes a difference
link where you can you get the Spanish one I'm using in the description box below while the oil is heating I'm going to cut one small to medium-sized zucchini into rounds that are 1/4 in thick which is a little over half a centimeter and as you can see I'm leaving the skin on it as it adds more nutrients and flavors if you prefer you can peel the zucchini then we'll add the sliced zucchini into the hot fry pan and we'll mix it around that way it's all coated in the olive oil and you don't have to mix this continuously but do get in there every minute or so that way all the zucchini evenly sautes in the meantime I'm going to finely chop one medium sized onion
roughly chop six cloves of garlic finely chop one small carrot that's been peeled and cut one red bell pepper into small strips and like I've told you before if you prefer you can chop the ingredients before heating the pan and we'll also measure out one cup of rice which is 190 grams I'm using Spanish short grain rice which is similar to arborio of course you can use any rice you like here just make sure to check the package instructions that way your liquid to rice ratios and your cooking times are right on the money and I
tell you for this recipe you want to add in a little extra liquid than what the package states as that's one of the elements that give this dish that slightly creamy texture alright let's move back to the zucchini after sautéing it between 5 to 7 minutes and it's lightly browned we'll remove it from the pan and set it aside now using the same pan with the same heat we'll add in the rest of the chopped vegetables
and we'll mix them around that way they're all coated in the olive oil and at this point I like to mix this around continuously that way everything evenly sautes after about 4 minutes and the vegetables are lightly sauteed I'm going to add 1 teaspoon of ground turmeric which is 2 grams we'll also add in half a teaspoon of sweet smoked Spanish paprika which is a little over 1 gram and season with sea salt and a generous portion of freshly cracked black pepper and we'll give it a quick mix and I tell you by adding in the spices right now and lightly sautéing
them it's going to make them nice and fragrant which gives this dish a beautiful lift of flavors then we'll add in our rice and we're going to continue to mix this and go for about 2 minutes here after sauteing the rice for about 2 minutes and it's lightly sauteed and nice and aromatic we'll grab our simmering vegetable broth and gently add it into the pan and we're going to simmer this for about 18 minutes or until the rice is just cooked through once again make sure to check the package instructions on the rice you're using that way you get your cooking times right on the money and you also want to make sure
to mix this every 2 to 3 minutes as that's going to help release the starch in the rice which is the other element that gives this dish that slightly creamy texture after simmering the rice for 16 minutes which in my case it's 2 minutes shy of the rice being cooked through we'll add the sauteed zucchini back into the pan and we'll give it a mix and go for another 2 minutes here or until the rice is just cooked through once the rice is just cooked through this is ready to go I'm going to turn off the heat squeeze in two teaspoons of fresh lemon juice over the rice which is 10 ml and give it one final mix
then we'll transfer some of the rice into a serving dish and top it off with some chopped cilantro you can also use chopped parsley here if you like either way check it out our creamy turmeric rice with vegetables is done easy to make the simplest ingredients and all done in about 40 minutes let's give this a try and see how it turned out once again folks Arroz Meloso con Curcuma y Verduras and I tell you it smells divine in the kitchen today here we go
such a big bite but it is so good check that out this right here is truly what honest home cooking is all about as we got such basic and simple ingredients and got so many flavors out of this the rice is beautifully cooked absorbed everything in the pan you got that creamy texture all those vegetables that lift up goodness and then the turmeric taking this to the next level but most importantly that zucchini by sautéing it first taking it out and then adding it at the end it didn't get mushy it's got such a great texture to it easy to make heart healthy give it a try at home once again perfect for a busy weeknight or for a relaxed
